Crunchy Winter Kale Salad

This salad is going to brighten up your table… and your life!

This salad is filled with kale, cabbage, brussel sprouts, pumpkin seeds and pomegranates. I even created a beautiful apple cider vinegar dressing to add to your salad.

This dressing is made with only 5 ingredients! One of those ingredients is parmesan cheese. I used a vegan parmesan cheese but real parmesan cheese is great as well! It is optional, but it adds the perfect flavor to this salad!

*In this recipe, I used blanched brussel sprout leaves. For this, I removed a few layers of each brussel sprout then boiled in water for 2 minutes.

Okay, I called it a winter salad, but this can also be a fall salad too!


1 bunch of kale chopped
1/2 of a green cabbage chopped
1/2 cup blanched brussel sprout leaves *(see above)
1/3 cup pomegranates
1/4 cup pumpkin seeds
(extra parmesan for topping)

Directions: Mix all ingredients together in a large serving bowl.

2 tbsp dijon mustard
4 tbsp apple cider vinegar
1/2 cup avocado oil
pinch of salt
1/4 cup grated parmesan

Directions: Whisk all ingredients together then top on salad.
