Pumpkin Cinnamon Roll Waffles

Something I am obsessed with right now are waffles. I love them for breakfast and for dessert. While I love the waffles you find in the frozen aisle at the grocery store, I LOVE them homemade!

These waffles are gluten free and grain free. They are perfectly filled with pumpkin essence and they have a very sweet cinnamon sugar flavor as well! Enjoy!

Yields: 5 small waffles

1/2 cup almond flour
1/4 cup cassava flour
1 tsp pumpkin spice
pinch of sea salt
4 tsp coconut sugar
1 tsp baking powder
2 tbsp pumpkin puree
3 tbsp softened coconut oil
1 egg
about 1/3-1/2 cup almond milk
1 tsp cinnamon

Directions: Heat up your waffles maker (you may also heat up a pan to make pancakes if you don’t have access to a waffle maker). In a mixing bowl, whisk together the almond flour, cassava flour, 2 tsp coconut sugar, baking powder, salt, and pumpkin spice. Then add the pumpkin puree, 2 tbsp coconut oil, egg, and almond milk. Mix well. In a small bowl, mix together the 1 tbsp coconut oil, 1 tsp cinnamon, and 2 tsp coconut sugar. Spray your waffle maker prior to using. Then begin scooping about 1/4 cup batter onto the waffle iron. Then add a drizzle of the cinnamon sugar mixture on top. Cook until desired finish. Then serve and enjoy!
