Chocolate Chip Pumpkin Spice Cookies

I honestly bake more in the fall time than any other season. Autumn to me always meant getting more cozy & spending more time at home (curled up on the couch with a candle lit). When you add pumpkin season into the mix and it just takes cozy to the next level.

If you haven’t tried my classic chocolate chip cookies yet, I definitely recommend trying those! These pumpkin spice cookies are very similar except I have added pumpkin puree and pumpkin spice!

In my opinion, pumpkin puree should be used year round in recipes. Pumpkin adds so much moisture to baked goods, and it also adds so many amazing benefits. Pumpkin is amazing for you hair and skin health. You may notice when fall rolls around, salons are offering pumpkin facials. Its not just because its “pumpkin season”, it is because pumpkin is so beneficial to your skin health (whether it is applied topically or internally). It is packed with Vitamins A, E, C, and some B vitamins, all of which have amazing benefits for your skin! So while you’re enjoying these chocolate chip cookies, remember that there are benefits under all that sweetness!

These cookies are grain free and gluten free.

Yields 12 cookies:
1/4 cup melted coconut oil
1/4 cup avocado oil
1/2 cup coconut sugar
1 tbsp pumpkin puree
2 tbsp tahini
1 tsp vanilla extract
1 egg
pinch of salt
1 1/2 cup almond flour
1/2 tsp baking powder
1/3 cup chocolate chips

Directions: Preheat your oven to 350. Line a baking sheet with parchment paper. In a medium bowl, whisk together the coconut sugar, coconut oil, and avocado oil. Then add the pumpkin puree, tahini, vanilla extract, egg, and salt. Whisk until smooth. In a separate bowl, mix together the almond flour and baking powder. Then combine the wet and dry ingredients. Once well combined, fold in the chocolate chips. Then begins scooping 2 tbsp of dough. Roll each into a ball in the palm of your hand, then flatten into a cookie shape. Transfer to the baking sheet. Then bake for 15 minutes. Remove from oven, let cool and enjoy!
