While I do love vegetables, sometimes they just aren’t what I am craving. Sometimes I need to sneak them in to things like sauces, making zoodles instead of pasta etc. These bites are the perfect way to sneak those extra vitamins and nutrients in. They are loaded with 5 different vegetables! So for any of you mamas out there struggling to get your kids to eat their veggies… this one is for you!!
The spices and seasonings I used are customizable too! You can use any spices and seasoning that you’d like. The seasonings I used are very simple. My tip is to start with salt, garlic powder, and onion powder and then add in your favorite seasonings. For a southwest version try my Crispy Spicy Veggie Bites. You can also use the seasoning from that recipe in this one too! Another tip is to keep the seasonings to a minimum and make it all about the sauces! Try a healthy BBQ sauce or buffalo sauce!

Makes 20 bites
1 head of broccoli (remove the stem)
1 bell pepper (de stemmed and de seeded)
2 large carrots (option to peel)
1 cup kale
1 cup cassava flour
1/2 tsp salt
1/2 tsp oregano
1 tsp garlic powder
1/2 tsp onion powder
pinch of thyme
dash of cayenne (optional)
dash of sage
black pepper (optional)
(you may also use seasonings of your choice!)
In a blender or food processor, blend the broccoli, bell pepper, carrots, zucchini and kale until smooth. Transfer to a mixing bowl and add the eggs. Mix well. Then add in the cassava flour and seasonings of your choice. Then heat up a skillet over medium heat with avocado oil. Once well heated, begin scooping about 2 tbsp of batter and adding it to the pan (keep an inch between each patty). Cook for about 4-5 minutes on each side. Let cool and enjoy with any of your favorite sauces!
Store in the fridge for a week or in the freezer for longer! (reheat in the oven or over a stove!)
