Brownies or blondies? While I love vanilla everything, I will definitely take the brownies over blondies.
These brownies are made with the amazing superfood: cacao.
Cacao is what gives these brownies the chocolate flavor. Cacao is filled with fiber, protein, potassium, magnesium, and is amazing for blood health.
I also used pumpkin in this recipe too (which can also be found in my pumpkin spice brownies). Pumpkin is packed with vitamins and minerals that are amazing for your skin and over all health.
These brownies are grain free and gluten free. They are made with a fudgey chocolate center that will melt in your mouth. Enjoy!
1/2 cup cassava flour
1 cup almond flour
1/4 tsp baking powder
1 cup coconut sugar
1/3 cup pumpkin puree
1/2 cup melted coconut oil
1 tsp vanilla extract
1/3 cup cacao powder
1/2 cup chocolate chips
Preheat your oven to 350. Grease a brownie baking dish with oil. In a medium bowl mix together the cassava flour, almond flour and baking powder. In a separate mixing bowl, mix together the melted coconut oil, coconut sugar, and pumpkin puree. Then add the eggs and vanilla extract, mixing well. Then begin folding in the cacao powder. Once well combined, add the dry flour mixture. Mix well, making sure there are no cacao clumps left. Once well combined, transfer half the mixture into the brownie dish and smooth over the bottom of the pan evenly. Take your chocolate chips and begin to sprinkle them until the first brownie layer is covered. Then add the rest of the batter on top (you will have to do some smoothing to make sure the chocolate chips are covered. Bake for 25- 30 minutes. Let cool and enjoy!
