Stuffed Peaches

There is nothing better than spring & summer peaches. They are so refreshing on a summer day. One of the things that I picture when I think of summer is ripe and juicy peaches. You know it is summer when you head into your local market and there is a large abundance of peaches in the produce section.

Peaches are AMAZING for your skin. They are packed with Vitamin C & A. Both of these work together to keep your skin healthy with both of their powerful benefits which include:

+helping to keep the collagen in your skin healthy
+helping your cellular repair of your skin

All to give you beautiful, youthful, and radiant skin… like a peach.

These stuffed peaches are going to keep your skin beautiful and your summer heart happy. The stuffing in these peaches is completely plant based and refined sugar free. Enjoy!

Ingredients:
4-5 Peaches, cut in half, and pit removed.
Cream stuffing:
1 cup cashews (soaked for 4 hours) drained and rinsed
1/4 cup canned coconut milk
2 tbsp maple syrup
1 tsp vanilla extract
1/4 cup arrowroot powder
1/4 cup coconut flour

Directions:
Place all the cream stuffing ingredients in a blender or food processor. Blend until smooth. Then begin stuffing each halve of peach with the stuffing (as much as you’d like!) Optional to top with cinnamon. Enjoy!
