There are so many reasons to love peanut butter. It makes the perfect addition to so many snacks, desserts, smoothies, pancakes etc. Did you know that peanuts are actually not even a nut?! I know NUTS right?!!? They are actually a legume. (So those following a paleo diet might want to skip this recipe entirely).
Peanuts are well known for being a great source of protein, healthy fats, and fiber. But did you also know that they are a great source of magnesium too! Magnesium is hard to come by in food form.

These cookies are grain free, and gluten free. Enjoy with an unsalted and unsweetened peanut butter for a refined sugar free cookie!
1 1/4 cup almond flour
1/4 cup cassava flour
1/2 tsp baking powder
1/2 cup coconut oil
1/2 cup coconut sugar
2 tbsp tahini
4 tbsp peanut butter
1/2 cup cacao powder
1 tsp vanilla
Preheat the oven to 350. Line a baking sheet with parchment paper. In a medium bowl, mix together the almond flour, cassava flour, salt, and baking powder. In a separate bowl, mix the coconut oil, coconut sugar, egg, tahini, 2 tbsp of peanut butter and vanilla extract. Then add in the cacao powder and mix well. Then combine the dry and wet ingredients and mix well. Once combined, begin scooping out about 2 tbsp of batter, rolling into balls. With each ball, press your thumb into the middle to the ball, creating a hole. Fill with a small amount of leftover peanut butter. Then fold in the sides of the ball to cover the peanut butter, then begin pressing down into a cookie shape (some of the peanut butter will ooze through!). Place cookies an inch apart from one another. Bake for 12 minutes, remove from heat, let cool and enjoy!
