Classic Chocolate Chip Cookies

When I first started Live Well Eat Well by Kimmy, I created a goal for myself to create a signature chocolate chip cookie. I don’t know if you are anything like me (if you’re here I am sure we do have commonalities!) but if I went to a pizza shop and they didn’t have a classic cheese pizza done to perfection, I would be disappointed. That is how I feel about baking. The classic chocolate chip cookie is something I have sought out to create since the beginning, and it is finally here.

I do have a few other chocolate cookie recipes on the blog. I have chocolate chip cookies that are made of oat flour and chocolate chip cake cookies as well as many others. These ones however give you that true old fashioned chocolate chip cookie experience.

These cookies are made with almond flour. (try this chocolate chip cookie recipe that is made with oat flour if you’re looking for a nut free version) These cookies are grain free as well as gluten free. I have not used any subs in this recipe (I will try and make an egg free one soon). Enjoy!

side note: you may use 1/2 cup of either avocado oil or coconut oil instead of 1/4 cup of each. I love the mix of the 2 but if you only have 1 oil on hand that is okay!

Ingredients:
1/2 cup coconut sugar
2 tbsp almond butter
2 tbsp tahini
1 egg
1 tsp vanilla extract
1/4 cup avocado oil
1/4 cup coconut oil
pinch of sea salt
1 1/2 cup almond flour
1/2 tsp baking powder
1/2 cup chocolate chips

Directions:
Preheat your oven to 350. Line a baking sheet with parchment paper. In a mixing bowl, mix together the coconut sugar, avocado oil, and coconut oil. Once combined, add the egg, vanilla, sea salt, tahini, and almond butter. Mix until well combined. In a separate bowl, mix the almond flour and the baking powder. Then combine wet and dry ingredients. Once combined, fold in the chocolate chips. Then begin scooping out 2 tbsp of dough and creating your cookies, leaving 2 inches apart from each cookie. Place your cookies on the parchment paper, use your fingers to flatten to a cookie shape just a bit. Then bake for 14-16 minutes. Transfer baked cookies to a cooling rack, let cool, and enjoy!
