Crispy Spicy Veggie Bites

If there is one thing I love it is snacking. I love discovering new healthy brands at the local health food store, but I also love to make my own.

These veggie bites are perfect for any time of the day. They are even kid friendly! You can serve them with ketchup, salsa, guac… really anything you want! They are also a great vegetarian alternative to chicken nuggets with a little kick! They are the perfect app for any game day or summer BBQ. They are also a great way to sneak in lots of vitamins and nutrients (for any families who have trouble getting their kids to eat veggies!).

These bites are also a great source of protein. I used a combination of eggs, chickpeas, and almond flour which are great healthy sources of protein. I also created these to be low carb too!

These are really great to meal prep ahead of time. I store mine in the freezer and just reheat them on the stove top or in the oven.

Ingredients:
1 can of chickpeas drained and rinsed
1 small zucchini
1 cup finely diced peppers (I used poblanos and bell peppers, you can also use jalepeno, habanero, etc.)
1/2 cup cassava flour
1/2 cup almond flour
1 tsp cumin
1/2 tsp salt
1 tsp chili powder
dash paprika
1 tsp garlic
1/2 tsp onion powder
2 eggs
2 tbsp avocado oil (plus more for brushing)
dash of oregano
optional (dash cayenne)

Directions:
Preheat your oven to 350. Line a baking sheet with parchment paper. Blend your drained and rinsed chickpeas in a high speed blender or food processor until smooth. Using a cheese grater, begin shredding the zucchini over a plate. Once shredded, drain most of the excess liquid from the zucchini (I squeeze it in my hands over a bowl, however you can also use a paper towel to do this). Transfer to a medium bowl and add the rest of the ingredients including the chickpeas. Mix all ingredients until smooth. Begin scooping out 2 tbsp of dough and create small balls. Using your fingers, flatten just a bit (1/2 inch thick). Place on parchment paper and repeat until all bites are created. Gently brush the excess avocado oil on top of the bites. Place in oven for 15 -20 minutes (or until golden brown and crispy).
