Everything about summertime makes me happy. Warm weather, more time outdoors, and S’MORES!! What is better than summer nights around the fire making s’mores with friends and family?! And what could be better than a cookie and a s’more in one!?!
These cookies are gluten free. They can be made paleo and keto using paleo/keto marshmallows. The best way to do this is by making your own! There are so many amazing marshmallow recipes online. The marshmallows found at the grocery store work great if you are okay with a little extra sugar.
For this recipe I used almond flour as the base. Almond flour is an amazing nut flour. it is low in carbohydrates and it can replace regular flour so simply.
I also used tahini mixed with almond butter. Both of these give the perfect amount of moisture and add the perfect amount of “chewiness”.
I also used a mixture of avocado oil and coconut oil. They are both healthy fats and have so many beautifying properties. They are both perfect dairy free alternatives to butter.
1/2 cup coconut sugar
2 tbsp almond butter
1 tbsp tahini
1/4 cup melted coconut oil
1/4 cup avocado oil
pinch of sea salt
1 1/2 cup almond flour
1/2 tsp baking powder
1 tsp vanilla extract
1/2 cup chocolate chips
1 cup marshmallows (minis or the big ones cut into small pieces)
Preheat the oven to 350. Line a baking sheet with parchment paper. In a medium bowl, mix together the oils and the coconut sugar. Then add the tahini, almond butter, egg and vanilla extract. Mix well. Then add the salt, flour, and baking powder. Mix until well combined. Then fold in the chocolate chips and marshmallows. Then begin scooping out 2 1/2 tbsp of batter onto the parchment paper, leaving 2 inches between each cookie. Then bake for 12-14 minutes. Transfer cookies to a cooling rack. Let cool and enjoy!
