Chocolate Speckled Cookies

I love chocolate chip cookies. It took me so long to create my perfect version of a chocolate chip cookie. But sometimes I don’t want the big chunks of chocolate or a complete chocolate cookie. Sometimes I want just a little bit of chocolate. Sometimes I want that chocolate bar with 100% cacao and not have to taste the bitterness. Well friends, I am here to show you how.

All you need is one bowl, the ingredients below, an electric mixer or spatula and a cheese grater for the dark chocolate.

1/4 cup avocado oil
1/4 cup melted coconut oil
1 egg
2 tsp vanilla extract
2 tbsp tahini
1 1/2 cup oat flour
1/2 tsp baking powder
pinch of himalyan salt
2 squares of dark chocolate

Directions: Preheat your oven to 350. Line a baking sheet with parchment paper. In a medium bowl, mix together the oils, egg, vanilla extract, and tahini (works best with an electric mixer). Then add the flour and baking powder and mix well. Once combined, begin grating the chocolate into the bowl. Use the side of the grater that will create fine bits of chocolate. Once chocolate is grated, begin to fold in carefully. Then begin scooping out 2 tbsp of batter onto the parchment paper. leave about 1 1/2 inches in between each cookie. Then bake for 14 minutes. Remove from over and transfer to a cooling rack. Let cool, and enjoy!
