Breakfast in my household usually consists of PB toast or a smoothie. Sometimes on the weekends we will do pancakes if we want to get fancy. And when we want to get really fancy… we make banana muffins.
These muffins are delicious! They are gluten free. You can add in whatever you like. I love adding chocolate chips or walnuts. You can add pecans or whatever you like!
2 cups almond flour
1 cup oat flour
1/2 tsp baking soda
1/2 tsp baking powder
pinch of sea salt
1 tsp cinnamon
1/2 cup coconut oil melted
2 tsp vanilla extract
1/2 cup maple syrup
5 bananas mashed (best is using spotty bananas
1/2 cup plant based greek yogurt
*Optional 1/2 cup of chocolate chips or walnuts (or whatever you prefer to add)
Directions: preheat the oven to 375. Line your muffin tray with either oil or cupcake wrappers. Then in a bowl mix together the dry ingredients (leaving out the chocolate chips or nuts). Mix until well combined. In a separate mixing bowl, mix together the wet ingredients until smooth (an electric mixer works best). Then mix the wet and dry together. Then fold in the nuts or chocolate chips. Then begin pouring batter into the muffin tray. Bake for 40-45 minutes. Let cool and enjoy. (I recommend removing the muffins from the hot muffin tray And transferring to a cooling rack asap. This can be done By using a spoon to scoop out the muffins. Or loosen them then flip over if possible).
