These cookies are loaded with so many goodies. They are so delicious and satisfying. Often with cookies (especially chocolate chip cookies) I can’t stop at just one. These cookies are loaded with fiber and protein, you will be satisfied after 1 (or 2!). At first I called them breakfast cookies, but honestly they should be enjoyed all day. I love them as a late afternoon snack to hold me over till dinner too.

Ingredients:
1/2 cup melted coconut oil
1/2 cup coconut sugar
1egg1
1 tsp vanilla extract
1 banana mashed
1/4 cup creamy cashew butter
2 cups oat flour
1 cup oats
1/2 cup chocolate chips
directions:
preheat your oven to 350. Line a baking sheet with parchment paper. In a medium bowl mix the melted coconut oil with the coconut sugar. Mix for 1 minute. Then add the egg and vanilla extract. Then mix in the cashew butter and banana (an electric mixer works best if available). Then fold in the flour and oats. Once well combined, fold in the chocolate chips. Then begin spooning out 2 tbsp of batter onto the baking sheet. Leave about an inch between each cookie. Bake for 13-15 minutes. Enjoy!
