The one thing that is tough about creating a recipe is wasting ingredients. I try my hardest to get things right on the first try and it doesn’t always workout. These simple cookies came out perfect on the first try.
They are crunchy on the edges but soft in the center. They melt perfectly in your mouth. They also have the perfect sweetness to them. I recommend doubling or tripling the recipe because these will honestly go very fast.
Makes 10 cookies
Ingredients:
1/2 cup melted coconut oil
1/2 cup coconut sugar
1egg
1tsp vanilla extract
1 1/4 cup oat flour
1/2 tsp baking powder
Pinch Himalayan salt
Directions:
preheat oven to 350. Line a baking sheet with parchment paper. In a medium bowl mix together the flour, salt, and baking powder in a bowl. Then set aside. In separate bowl mix together the coconut oil and coconut sugar. Mix well for about 2 minutes. Then add in the egg and mix well. Then add vanilla and mix well. Then fold in the flour mixture. No need to over mix (the batter should fold smoothly). Then spoon out small amounts onto the baking sheet leaving about 2 inches apart from each. Bake for 12 minutes.
