Cookies are pretty much my favorite dessert, especially chocolate chip cookies. While I have yet to master my own classic chocolate chip recipe, I have mastered these chocolate chip cake cookies.
These cookies are perfectly cakey. They are perfect to snack on post dinner, or perfect to crumble on top of your ice cream. They are also great kept in the fridge and eaten cold.
These cake cookies are gluten free and grain free. I hope you enjoy them!
1/2 cup coconut flour
1 cup almond flour
1/2 tsp baking soda
1/2 tsp baking powder
1/4 cup melted coconut oil
1/4 cup almond milk
1/4 cup maple syrup
1tsp vanilla extract
1/3 cup chocolate chips
Preheat oven to 350. Line a baking sheet with parchment paper. In a medium bowl, mix together dry ingredients. In a separate bowl mix together the wet ingredients. Then combine both and mix well. Then fold in the chocolate chips. Pro tip: if you want a marble effect, mix in the chocolate chips over the heated oven (just enough to melt them just a little). Then begin spooning out small balls of dough and place on parchment paper, leaving 11/2 inches between each cookie. Bake for 12-25 minutes then press down on each cookie with a fork to flatten (before cooling). Then let cool and enjoy. Store in the fridge for 1 week or in the freezer for longer.
