I was never a huge milk chocolate girl. I guess it was probably because I never knew my true heart lied with dark chocolate. I also was never a double chocolate girl. But these cookies are a game changer for me.
These cookies are moist and have a cake like texture with melty chocolate chips. You will love them. They are gluten free and grain free. They are also so easy to make. Enjoy!
1/2 cup coconut flour
1 cup almond flour
1/2 tsp baking soda
1/3 cup cacao powder
1/2 tsp baking powder
1/4 cup melted coconut oil
1/4 cup unsweetened almond milk
1/4 cup maple syrup
1 tsp vanilla extract
a good handful of chocolate chips (i like to eyeball this one)
Directions: preheat oven to 350. Line a baking sheet with parchment paper. In a mixing bowl, mix together the dry ingredients leaving out the chocolate chips. In a separate bowl mix together the wet ingredients. Then combine both wet and dry ingredients and mix well. Then fold in the chocolate chips. Then scoop small balls of batter onto the baking sheet. Leave an inch and a half between each ball. Press down and flatten cookie (they will not flatten on their own). Then bake for 10-12 min. Let cool and enjoy!
