These cookies are my absolute favorite. I made them last year for the first time around Christmas and I am finally adding them to the blog.
These chunky cookies are so chewy and moist. They are dairy free, gluten free and grain free. I love them for the holidays but honestly, they should be enjoyed year round.
This recipe makes about 8 cookies but I recommend doubling up the batch.
Ingredients:
1/2 cup + 2/3 cup almond flour
1/2 tap baking soda
dash of salt
4 tbsp coconut sugar
1 tsp vanilla extract
2 oz almond milk or coconut milk
2 tbsp melted coconut oil
2 tbsp unsweetened coconut shreds
2tbsp chopped walnuts
1/4 cup dark chocolate chunks (or chips)
Directions:
Preheat oven to 375. Combine all dry ingredients EXCEPT the last 3 ingredients. Then add wet ingredients and mix well. Then fold in the chocolate chips, coconut and walnuts. Place parchment paper on a cookie sheet and spoon out small balls onto the cookie sheet. Makes roughly about 8-10 cookies. Bake for approx. 8-10 min. Let cool completely before pressing down gently and enjoy! You can store in the fridge for up to 5-6 days or in the freezer for longer. And trust me, they taste delicious cold and warm!
