Pumpkin Spice Fudge Brownies

If you love chocolate and pumpkin spice, you will LOVE these brownies. They are so thick and gooey and so chocolatey. Of course you can forgo the pumpkin spice seasoning, but you’d be missing out on the fall essence of the dessert. I highly recommend using a smaller baking dish than your usual brownie baking dish. Reason being, you will get a thicker brownie. I used a 8×4 or 6×4 dish. You can still use a regular 8 square inch brownie baking dish, just make sure to not over cook!

1/2 cup cassava flour
1 cup almond flour
1 cup coconut sugar
1/4 cup pumpkin
1/2 cup coconut oil
2 eggs
1 tsp vanilla extract
1/3 cup cacao powder
1/4 tsp baking powder
1 tbsp pumpkin spice
chocolate chips
extra coconut oil for greasing

preheat oven to 350 and grease pan with extra coconut oil. Melt 1/2 cup coconut oil in a sauce pan on low heat. While melting, add coconut sugar, eggs, pumpkin, and vanilla extract to a medium mixing bowl. Once coconut oil has melted, immediately add to the bowl. Mix well. Then fold in baking powder, flours, cacao powder, and pumpkin spice seasoning. Once mixed, add in chocolate chips and fold in. Then transfer batter to your baking dish and spread evenly. Bake for 30-35 minutes. If using an 8 square inch pan check at 25 minutes with a toothpick. If the toothpick doesn’t come out clean check every 5 minutes until it comes out clean. Remove from heat once cooked, let cool, and enjoy.
