We all know the beloved cranberry and candied walnut salad. I myself crave this salad at least once a week in the fall. Back in my hometown in Boston, I used to get a similar version of this salad at our local restaurant, where we would go out to watch football on Sundays. It was always my go-to.
I truly dislike spending money on salads. Salads are always over priced, and somehow unhealthy ingredients sneak their way in. So I love to create salads at home and make my own healthier dressings. And yes you CAN make a delicious and healthy dressing at home. You don’t need to spend the money on bottled dressings. I do love to keep some dressing on hand when im feeling lazy. My go to brands are Chosen Foods and Primal Kitchen. Primal Kitchen offers are wide variety of Paleo and Keto friendly dressings. Chosen Foods offers dressings made with avocado oil instead of canola and other harmful oils. Pro tip: Save your glass salad dressing bottles. I wash them and take the sticker off, and use the bottles to store my homemade dressings.
This salad is my version of the cranberry walnut salad. Real ingredients. And you will fall in love with this dressing. I promise it is better than store bought. It is paleo and keto friendly. No grains. Dairy free. There are so many beauty benefits in this salad. It is perfect for keep you feeling full, energized, and brighter inside and out.
For the dressing (makes about 4-6 servings)
1/2 cup avocado oil
1/4 cup white balsamic vinegar
1 tsp raw honey
1 tbsp dijon mustard
pink salt and ground pepper to taste
Salad 2 servings:
4 cups kale chopped
1 honey crisp apple chopped
2 celery stalks chopped
1/4 cup chopped walnuts unsalted
1/4 unsweetened dried cranberries
1/4 cup hemp seeds
2 tbsp flax seeds
