Pumpkin Spice Banana Nut Bread

Its OFFICIALLY FALL! And it’s finally feeling cooler, at least in the mornings. Which is satisfying enough for my autumn solstice loving soul. I have been cooking up so many fall and pumpkin inspired meals the past few weeks. Living in a hot climate, you really need to find ways to get in “the mood”. If you know what I mean. Yes, I did buy some pumpkins for decorating. BUT what really gets me in “the mood” is the smell of pumpkin spice radiating through the air from the air oven. That moment when whatever you are baking is just about done, and it hits your nose immediately right before your timer goes off. That is what makes me feel like it is that time of year

So while I was baking up the fall treats, I decided to put my two favorite things together. Banana nut bread, meets pumpkin spice. And as you can imagine, the two were meant to be. An obvious match made in heaven. This bread is gluten free and grain free. It’s Paleo and Keto friendly. You can always sub out the nuts and the nut flours for another gluten free flour if you are avoiding nuts. If you arent using almond flour, I would suggest Bob Red Mills gluten free flours. I would suggest reading the labels for the ingredients before you buy. Some gluten free flours can contain additives, nut flours, or may not meet your health and fitness goals. It is important to do your research.

So without further ado, here is the recipe for my pumpkin spice banana nut bread

Ingredients:

2 1/4 cups almond flour
1 tsp baking powder
1/2 tsp baking soda
dash himalayan salt
1 tsp pumpkin pie spice
1/4 tsp ground cinnamon
1/4 tsp ground ginger
1/4 cup almond milk
1 tsp vanilla extract
2 eggs
3 bananas mashed
1/2 cup coconut oil melted
1/2 cup pumpkin puree
3 tbsp maple syrup
chopped walnuts


Directions:
preheat oven to 350. Coat a bread pan in coconut oil. In a medium bowl mix together dry ingredients. In a separate bowl, mix together wet ingredients. Then mix the wet and dry ingredients together. Once combined, fold in the walnuts. Bake for 50 min – 1hr 10 min OR until golden brown and a toothpick and go in and out clean!
