My Favorite Banana Bread

I used to hate baking. I hated having to measure everything out and then set a timer and wait 45 minutes for everything to be done. Not only that but it can definitely create a huge mess in the kitchen. I have learned over the years to love it. I’ve learned to love spending time in the kitchen. Some Sundays I’ll spend half the day cooking away. Making a big batch or loaf makes everything easier in the morning when you’re in a rush. Grabbing a muffin or a slice of banana bread is a lot quicker than getting a smoothie together or cooking up an omelet. And it can still be just as nutritious and delicious. This week I’m sharing my favorite banana bread recipe. Its paleo and Keto friendly, grain free and gluten-free. I love this one a lot and make it most often. I use a mixture of coconut and almond flour for the recipe. The coconut flour does have a “drying” and grainy effect so if you want it more moist then I would add some almond milk or extra banana or use almond flour in its place. And make sure you don’t over bake. I also love this recipe because it turns into an amazing banana bread french toast. Trust me you’ll want to save a slice for your Sunday morning brunch.

What you’ll need for the ingredients:

1 1/4 cup almond flour

1 1/4 cup coconut flour

1 1/2 tsp baking powder

1/2 tsp baking soda

a pinch or 2 of himalayan salt

3-4 bananas ripened and mashed

2 eggs

1/2 cup melted coconut oil

3 tbsp maple syrup

handful of dark chocolate chips, walnuts, almonds etc.

preheat oven to 350. spray a 4×6 baking dish with avocado or coconut oil spray

mix dry ingredients in a bowl. then mix wet ingredients in a bowl separately. combine dry and wet ingredients together. mix well. add chocolate chips (or any other ingredients you want) and mix till combined. The dough will be thick but not dry. Press into pan evenly. and bake for 30-35 minutes

TIP: I like to add a cinnamon sugar glaze to the center. I add half the dough in the pan and press down evenly. Then I combine 1 tbsp melted coconut oil, 1/4 tsp cinnamon, 1 tsp coconut sugar together in a separate bowl. Once mixed, using a spatula or the back of a spoon, smooth the glaze over the dough. Once spread, add the second half of the dough and press down evenly. then bake for 30-35 min until a toothpick can go in and out clean
