Not Your Grandmas Pancakes

I woke up the other morning and my usual breakfast go-to’s didn’t sound the best. Usually I have an omelet with some fruit and veggies or I make a smoothie. Anyone else just stick to what they know and don’t venture off the path?!?! After turning 27, I made a list of intentions that I wanted to live by over the next year. Trying new things is number 1! Not to say I don’t try new things ever, but I do catch myself afraid to stray the shadow of my routine too often. And that applies to my food routine too. Lunch and dinner I will change up, but breakfast is rare. Anyways, when my usual didn’t sound appealing, I went for an all time favorite, pancakes! Who doesn’t love a good pancake? And these pancakes are UNREAL. First I will start by saying they are totally Paleo and Keto friendly. You can absolutely sub out the coconut sugar and make it sugar free as well. They are packed with protein. You can add strawberries, blueberries, peaches, nuts, chocolate chips, cinnamon etc. What is also amazing on top of them being clean, this is a single bowl recipe. I am all about a easy cleanup, especially in the morning.

Serves 2 (or if you are super hungry then dig in yourself)

Ingredients

1/2 cup almond flour

1/4 cup cassava flour

pinch of sea salt or himalayan salt ground

1 tsp baking powder

2 tsp coconut sugar

2 tbsp coconut oil softened

1 egg

about 1/2 a cup of almond milk

directions:

mix together dry ingredients first. then add in wet ingredients and combine fully. Then fold in your extra toppings. Heat up a skillet with oil on medium heat. Once heated and oiled, spoon the mix onto the pan making sure to leave room for flipping. cook for about 3-4 minutes on each side. I like mine a little crispy so i like to cook them a little longer. Remove from pan and top with your toppings and enjoy!
